Cheese and Salsa Chicken Chowder

 

 

Campbell Cheddar Cheese SoupI came across this recipe when I was looking for something creative to do with Chicken breasts other than my usual oven fried chicken. This soup with its spicy kick and creamy texture did just the trick. Now Campbell’s Cheddar Cheese Soup is a staple in my kitchen pantry.

Ingredients

  • 2 cans (10 3/4 oz. each) Campbell’s® Condensed Cheddar Cheese Soup 
  • 2 soup cans milk
  • 1 1/2 cups Salsa (medium)
  • 1 1/2 cup shredded cheddar cheese
  • 3 cups cubed cooked chicken breast
  • Sour cream

 

Directions

1. Mix soup, milk and salsa in saucepan. Heat to a boil. Cook over low heat 5 min.

2. Add cheddar cheese and chicken and heat through. Garnish with sour cream and tortilla strips.

 

TIP:

For 3 cups cubed cooked chicken, in medium saucepan over medium heat, in 6 cups boiling water, cook 1 -1/2 lb. boneless chicken breasts or thighs, cubed, 5 min. or until chicken is done.
